The Broths & Noodles
Our broths are hand-made fresh every day, right here.
Broths are Assari style; clear and thin but packed with umami goodness and cooked at a light simmer to prevent clouding.
They're all preservative, MSG, and gluten-free!
Pork + Chicken - slowly simmered pork and chicken bones, with heaps of fresh vegetables and aromatics that add depth and umami.
Vegan - premium kombu, shitake mushrooms, fresh vegetables and aromatics that provide the umami.
We affectionately refer to our ramen noodles as Noodle #47, because it took 47 tries and over 3 months working with a local noodle maker to arrive at one with the ideal texture, taste, color and just the right amount of slurp. They're made fresh using only the finest, high protein and pesticide-free Canadian wheat flours and contain no additives or preservatives.
We also offer low-carb and no-carb noodles. Our low-carb noodles consist of half Noodle #47 and half julienned and lightly blanched daikon and zucchini. The no-carb noodles are all daikon and zucchini, naturally gluten-free.
We custom finish each bowl with hand-made, original and unique sauces that provide the defining characteristics of Kayo’s Ramen. The sauces (and there are 17 of them!) are made fresh every day in our restaurant and are– as always– MSG-free.
All of the meat we serve is hormone and antibiotic free.
